La cave Domaine des Diables
Built partly between the walls of the old cellar of the Estate, the new cellar is fully equipped with high-performance stainless steel equipment (pneumatic press under inert gas, tangential filter, thermoregulation vats etc.). The total capacity of the cellar is 300,000 litres in stainless steel vats and coated concrete. Around 4,000 litres make up our barrel cellar with capacities ranging from 300 to 600L. During wine-making, each plot is vinified separately to ensure traceability from the vine to the consumer and adapt the best winemaking technique to the must, according to the origin of the plot soil.
