The whole estate enjoys optimum exposure which is crucial for the production of healthy, high-quality grapes. Our parcels are in fact constantly subject to twelve different winds - the most famous of which being the Mistral -which limits the development of the main fungal diseases found in vines (downy mildew, powdery mildew and botrytis).
This constantly hot and dry climate, combined with green pruning techniques, enables us to significantly reduce the need to use plant protection products in the vineyard which is considered to be one of the most natural in France.
At night, the Mont Sainte-Victoire comes into play. Heat stocked during the day radiates out of the mountain at night, providing warmth for the vine and more regular ripening conditions for the grapes. Furthermore, in summer, the calcareous mountain rock turns white as it becomes dry and reverberates light across the vineyard like a mirror, thus increasing the intensity of the already strong sunlight. Only the parcels closest to the Mont Sainte-Victoire enjoy these natural and unique conditions, under which we produce Hydropathe, the ultimate of Provençal wines.
