The winemaking cellar, built in 2000, is fully equipped with high performance stainless steel apparatus (pneumatic press for pressing under inert gas, cross-flow filtration system, thermo-regulated vats, etc). The cellar has a total capacity of 5,500 hectolitres (550,000 litres) in stainless steel vats and 90 hectolitres (9,000 litres) in 225-litre barrels and 600-litre demi-muids made from French oak.

During the winemaking process, each parcel is vinified separately to ensure traceability from the vine to the consumer and to allow the most suitable vinification method to be used for each type of grape must, according to the type of terroir on which the grapes were grown.
